This Three-Michelin Star Chef Plans to Open a Modern Nordic Restaurant in Shanghai

Sneaky news from the depths of the chef world: Bjorn Frantzen, whose eponymous restaurant in Stockholm has three Michelin stars, plans to open in Shanghai in 2020. The new restaurant will serve "modern Nordic" food with Asian influences, all set in a casual and relaxed environment. In that regard, it will be much like Frantzens Kitchen (and maybe even called that) in Hong Kong, which opened in 2016. Guess what's on the menu there! “SWEDISH SUSHI”: crispy lichens, roe deer, cep mayonnaise & frozen bird´s liver! Add him to the list then, and place your bets now: will he be a Vongeritchen or a Berasategui? Is the hole in Shanghai's dining scene really New Nordic shaped?
