EDITION's Japanese Restaurant Hiya Opening on Saturday Night

Of all the restaurants at the Shanghai EDITION, which we featured this week, perhaps none is so highly anticipated as Hiya. The modern Japanese restaurant is the Shanghai version of Jason Atherton's Sosharu restaurant in London, itself the London version of a Japanese izakaya. While down at the hotel for lunch today, Atherton himself was making the rounds at Shanghai Tavern, charming a packed dining room, and he dropped this little nugget: Hiya will open on Saturday, 11 August for dinner, and will be open to the public from then on. Chef Christopher Pitts is in charge, with a gleaming new toolkit of knives from a recent shopping trip to Japan. Have at it!
