. The modern Japanese restaurant is the Shanghai version of Jason Atherton's Sosharu restaurant in London
, itself the London version of a Japanese izakaya. While down at the hotel for lunch today, Atherton himself was making the rounds at Shanghai Tavern
, charming a packed dining room, and he dropped this little nugget: Hiya will open on Saturday, 11 August
for dinner, and will be open to the public from then on. Chef Christopher Pitts is in charge, with a gleaming new toolkit of knives from a recent shopping trip to Japan. Have at it!
