Jade 36

Jade on 36 has brought us a real fine dining venue with a stunning view of the Bund. On half of the height of the Jin Mao dining venues you get a sight twice as attractive. Jade, the restaurant and the bar, has been acclaimed for its design. The waiters will happily explain the concept behind the design - I prefer it plainer interiors.

If you have heard of "Cuisine Moleculaire" - with Jade comes a bit of it: edibles in most unbelievable combinations, textures and presentations. Foams, infusions, sorbets - foodstuff dis- and reassembled. You will get a lot to taste and smell, from delicious, to funny, to silly..

There is a "sardine mousse" served with paper thin toasts - very tasty, but you have to like sardines. Any fish dish at Jade is phantastic: go for the Sea-bass Rivera, accompanied by a basil sauce and cherry tomatoes. And/or try the Rib Terriaki, ridiculously tender and flanked by an amazingly creamy polenta. Also outstanding: the jumbo prawn skewed on lemongrass and cooked in a jar with herbs and lime zests - when opened the jar releases beautiful fragrances.

Other dishes might be more challenging such as the Agar-Pomelo Ravioli: pomelo sorbet and fruit covered by a jellied and smoked sheet of water. Or the bonbon of foie gras covered by a caramelized leaf of tamarind and to be sampled with a spiced dose of green tea.

The oversized French Fry is a real looser: its cut to portion at the table and served with a sorbet of tomato ketchup. That's just culinary nonsense.

If you had more than 7 courses before it wont matter whether you have two deserts: Make sure that you have "lime & lime tart" and the "pizza" - beautiful sweet surprises.
The price for an evening of culinary escapades for two with some good booze will bring you close to an heart attack
- buts its worth it.
