La Mian or hand pulled noodles, sometimes known as beef noodles, originated from the city of Lanzhou, which is a 20km narrow metropolis strip on the southern bank of the yellow River in inner Mongolia. Lanzhou noodles were sold on the streets as early as the Han Dynasty and Tong Dynasty.

The noodle making process is a delicate art and Chef Liu will be using a premium flour from the Meelunie B.V. Amsterdam, Netherlands company. La Mian is made by holding the stretched out dough in both hands and whirling and slapping it on a prep table to break down the gluten. The dough is pulled, folded and pulled again until it transforms into long thin noodles. The process is repeated several times until the desired noodle circumference is acquired.
