Pick an appetizer (eggplant stuffed with buffalo mozzarella; pate de foie gras with red onion compote; etc), and then two pastas (home-made tagliatelle with lamb ragu and pecorino Sardo sounds nice), and then a main course -- maybe a veal Milanese.
