Xibei You Mian Cun specializes in the food of Shanxi Province. This unique cuisine borrows a lot from surrounding areas like Mongolia, so expect lots of rich flavors, hearty grilled and braised meats like lamb and beef, preserved and salted vegetables, mushrooms, and the like. The restaurant's namesake and signature dish is its oat noodles. They come in a variety of shapes and sizes, pulled, extruded, stuffed like dumplings, and steamed in a strange honeycomb formation and dipped in mutton soup.
