La Brasa Chicken.
It's a Peruvian-style rotisserie chicken joint, which means spit-roasted free-range chickens, french fries, and great dipping sauces made with things like the fruity
aji amarillo chili pepper. Simple, good stuff.
Vargas is having his rotisserie oven custom-built at the moment -- "like the ones in Peru" -- but once that arrives, "it's basically done." Should be open by the end of the month, maybe even sooner, in front of
The Loft. Some fancy designers did the place. Exact address is still pending, but it's in the first floor of that huge, 900-apartment complex that you enter from Shaanxi Lu.
You might have noticed this isn't the first rotisserie chicken place to open recently. There's
this -- the result of the first La Brasa deal being cooked, as it were, and one partner going commando on his own chicken mission. Vargas isn't involved in that one anymore, obviously.
Parting words: "The second location is going to be really big." Apparently, they've already got the other locations to turn this thing into a chain before the end of the year.
