" from September 12 until it gets too cold, opening Thursday to Saturday (like Botanik
) but installing group chef Freddy Raoult and beverage director Michael Chen. Whoa. Huh. Whoa. Raoult will be cooking a 10+-course degustation menu for 688rmb (like Botanik
) and will be sourcing "special ingredients from China" like yak, juniper, betel, buffalo milk, Yunnan pigeon, marigold, and geranium (like Botanik
). All in all, it seems more like a torch-passing than a new pop-up, and an opportunity for Raoult to cook in a way he has not at The Nest, The Cannery
or Rye & Co
