Locavore extraordinaire Austin Hu has created an eight-course Christmas Eve dinner featuring dishes like cured kampachi with hawthorn jelly, smoked trout with house-made trout caviar, pickled water celery and chestnut chips and prawns with saffron vanilla sauce .
