The Shanghai branch of a French gastronomy institution from Eric Pras, owner and chef of the three-Michelin star Chagny restaurant of the same name. The original in France opened in 1926 in a converted coach house that itself dates back to the 15th Century. That restaurant was awarded three Michelin stars in 2007. This restaurant takes that and jams it upon the 68th floor of the Shanghai Tower. It brings the famous Maison Lamelois inventive amuse-bouches and its basic, representative Burgundy elements in base ingredients, filtered through that foamy, swooshy French fine dining thing. It's very French. It's very fine dining. It's very expensive. The "Grand Menu" is 2,588rmb. The atmosphere didn't survive the trip over; a bit sterile and the lack of finish with the building itself is a disservice to the food, which is exceptional. Michelin-bait plus top-of-the-world view equals high-powered business lunches or dinners on very, very special occasions.
