    Cila is a Xibei-fusion restaurant led by a chef previously at Jean Georges. The menu features recipes from Northwestern China executed with Western cooking techniques. Xibei (西北) refers to the Northwest region of China, which includes Shaanxi, Gansu, Qinghai, Xinjiang and Ningxia. The region’s food and history have been heavily influenced by the Silk Road as well as ethnic minorities like the Hui, Uyghurs and Tibetans. Their top dishes are the Lamb Chops with Garlic Chive Reduction, and You Fa Mian, which is a thick, hand-pulled noodle mixed with various spices, chili oil, pork belly, and a sous-vide egg. Ingredients also stay close to tradition– all lamb are sourced directly from a renowned region in Ningxia. Wine and cocktails are readily available, sourced from both China and abroad. Second and third floors are also open for large groups and private events. Recommended for foodies who like Xinjiang-style meat and creative interpretations of regional Chinese cuisine.

Cila’s head chef was formerly trained at Jean-Georges, so dishes are an interesting fusion of Xibei ingredients and French culinary techniques. Dishes taste both familiar yet innovative, catering to a diverse range of palates.

      They also feature a modest selection of international wines and cocktails (with baijiu!) to complement the punchy flavors on their menu.
