YONE is the new concept in the space that used to be Hiya, on the 27th floor of the Shanghai EDITION hotel. It's still modern/contemporary Japanese with the same interior, but this time there's a bigger focus on drinks, having brought in Shanghai's cocktail daddy Shingo Gokan who's behind some of Shanghai's best known cocktail bars that have made it into global top lists. The kitchen is helmed by Fumio Yonezawa, who's made himself a name as the executive sous' chef at the renowned Michelin three-star restaurant, Jean-Georges, and former chef de cuisine at Jean-Georges Tokyo.
