Buchisu (不吃素) is a new casual Sichuan bistro on Jiaozhou Lu, opened by chef Zhang Jian of Obscura. True to its name, the menu focuses on hearty meat-forward dishes, served as set menus ranging roughly 300–500rmb per person, with each tier adding a few extra plates. Recent menus have included standout items like shark skin salad, stir-fried shark belly, mapo tofu with both regular and fermented tofu, and a “no-water” beef rib braised in radish juice. Portions are generous and flavors bold. The restaurant runs two dinner seatings per night, and reservations are recommended.
