Hard to believe the Park Hyatt Shanghai didn’t have a dedicated Chinese restaurant until 2019. They kept the English name of the former concept (Dining Room), but in Chinese it’s called Yue Xuan. The dining room is classic Park Hyatt: floor-to-ceiling windows with Huangpu River views, soft lighting, and that quiet, moneyed hotel hush. Chef Yang Chao, young and technically sharp, used to cook private dinners for government bigwigs. His menu leans into very well-executed Shanghainese and Jiangnan cuisine, with dishes like crispy pork cheek (98rmb), a whole lotus-leaf baked duck stuffed with abalone and bamboo (488rmb), delicate seafood soups, seasonal veg, and refined takes on Shanghainese staples. They’ve added an extensive regional tea program and pour exclusively Chinese wines, which pairs nicely with the view.
