A four-seat omakase counter tucked inside Hooha on Weihai Lu, Fabula is the passion project of chefs Charles Tam (ex-Amber) and Zee Zheng (ex-Tai’an Table, Le Bernardin). It runs entirely on reservations and serves a nine-course tasting menu (1,280rmb, plus an optional add-on) that leans European but borrows ideas and ingredients from all over. Expect unexpected pairings—caviar with watermelon, foie gras with winter melon—delivered with plenty of theater. It’s intimate, polished, and more performance than dinner.
