Sololatte is a small, high-quality Mozzarella operation run by a nice Korean architect-turned-cheese supplier (she's married to an Italian). Mozza starts as imported German curds, is made fresh every morning, delivered by the afternoon, and packed in distilled water. Delicious, rich stuff.
