FATHOM is a seafood restaurant located in the historic Bund City Hall building. The name refers to a nautical unit of depth (1 fathom = 1.83 meters), symbolizing the desire to explore the unknown. The concept of "New Wave Cuisine" places the ocean at the heart of every dish — from seafood and meat to vegetables and desserts, marine elements or flavours are present everywhere, creating new sensory connections between land and sea. The kitchen is led by Evgeny Vikentev — one of Russia's brightest young chefs, a Michelin-starred chef (2021), known for his precise, contemporary, and creative style. The interior is inspired by the rhythm of the ocean: wave‑like textures, marble, and volcanic stone tables. The entrance door resembles a passage through ice into the depths, while a private dining room, "The Jewel Box", in dark raspberry tones creates an intimate atmosphere. The restaurant also features one of China's finest Champagne collections, and caviar (beluga, sturgeon, French) is served with meticulous attention to detail. Every visit to FATHOM is an immersion into the ocean's depths through taste, visual design, and space.
