Vargas Grill is an unflinching dedication to the art and act of grilling -- everything on the menu is grilled by either one big gas grill or two smaller charcoal grills, even the desserts.The chef is the same from Azul and the menu is very straightforward; they're slinging imported US and Australian steaks, plus a bunch of sides.

Came over for christmas day dinner, the special menu was extensive and the portions were huge, but seeing as this was my first time at vargas and I had to try the ribeye which was tasty and not super expensive. The staff were cool and management was very friendly, they were really accomodating with our special requests. I defineatly would like to come back to try the brunch.
This place is ideal for a date, you can order the rib eye (enough for two) and order some sides and you'll end up being full and won't feel too big of a bite in your wallet. Wine selection is a plus.

Had brunch last Sunday at the Vargas Grill and was pleasantly surprised. This being my first brunch in Shanghai I have little to compare it with but everything was fantastic. We got a bed to sprawl out on, unlimited drinks for 100RMB which we definitely got our money's worth and the unlimited salad and cold cuts bar which was very tasty. Oh and the service was amazing!!!! Will definitely be back for more!!!!

Last night we decided to go for a meat / BBQ fix and Vargas has been recommended to us several times.
So we booked a table which wasn't necessary as the place was virtually empty when we arrived at 9pm.
The setting is nice, slightly dark with Pin-Up photos on the walls.
For starters we had spicy chicken wings and chorizo sausage. Both very good.For mains she took the Jamaikan Jerk Chicken and I had the Wagyu Beef Rib Eye. The steak was excellent!
The portions are huge, so you better go hungry.
We paid about RMB 700 incl.beers.
All in all a great experience. Will be back for sure.

Brunch on Sunday morn...er about 1 PM is my new jam. This week GF and I hit up Vargas to see what they had to offer.
There is a buffet of sorts and a set menu that included breakfast and lunch options and all the juice you can drink. I think there was a 'getting drunk' option too for an additional price, but we didn't.
The buffet had lots of bread and muffins, stuffed tomatoes, some cold salads, antipastos, and salami, prosciutto and other cured meats. That was all well and good but when our dishes came, GF's eyes lit up like the fog lights on a Jinbei. She got three of the most beautiful pancakes I have ever seen with about an ice-cream scoop of whipped butter and syrup. I ordered a burger and it was clean and neat and very solid, on a very good roll and without any mushy tomato or dirty lettuce. The bill wasn't cheap, but we couldn't eat another bite until late that night.
I think Alberto Vargas is tacky and out of place in Shanghai. However, I will come here again for the flapjacks and about a half gallon of OJ after a night out wrecking my liver.

First things first, AMAZING MEAT! Had the Australian Wagyu Rib Eye and it was fantastic, one of the best steaks I've ever had.
Chorizo starter was very tasty, had the meat to share. Sides were a little disappointing, approx CNY 30 for corn on the cob and essentially South American Couscous but this could not detract from an overall great meal.
On the pricey side, but unlike a lot of other western places in Shanghai I'd actually say you get what you pay for. CNY 630 for two people, including a glass of wine each. Will definitely be back.

When one thinks of grill, it's usually hot, sweaty and pulsating heat that strips away all glamour. Not at all enjoyable, but afterall, those who sweat together stays together. So, it's definitely worth the grill when friends get together. Yet, at Vargas Grill, grilling has progressed to be comfortable and pleasant, along with a sophisticated ambience. Vintage posters of women accentuated the woody tones of the dining space and brought about an intimate atmosphere.
The grilled corns were impressive. Once the humble staple food consumed by the pre-Columbian North Americans, they were sweet and came bursting forth with deep flavours of cilantro and chilli. As for the main, the grilled tuna with accompanying garlic, onions and potatoes was good. It had to be the spices, herbs and fresh ingredients that perfected the grill.
Lastly, I had the flour-less chocolate with smooth vanilla ice-cream. It was captivating; with a visually gorgeous blend of contrasting colours. With the absence of flour, I could only concentrate on enjoying the quality chocolate and ended my food voyage feeling completely satiated.

I had a brilliant meal at Vargas Grill few nights ago. Everything we ordered was extremely tasty, I would recommend to anyone on a date, business dinner or even a group a friends. It was wonderful including the ambiance.

Phew! just got home from dining at the Vargas Grill and i'm so happily stuffed all i can think about is falling asleep infront of the TV...my plans to go dancing are postponed!
this was my carnivore boyfriend's choice, but i was happy to see that there were three diffierent fish on the menu. He had Steak which he said was perfectly cooked but not quite warm enough in the middle, though i didnt try it. the fish was superb, still moist and full of flavour. there is a good choice of appetisers so if you are averse to red meat like i am there is still plenty to choose from. He had Pork ribs which he said were the best in shanghai but again you'll have to take his word for it! My salad was lovely, and good enough to not just be a "token vegetarian option" which is what i normally expect from meat focused restaurants.
the service is worth mentioning too; for this price range i'm usually happy to just get everything i order in a timely fashion, but our waitress was genuinely warm, knew how to describe some of the exotic sauces on the menu, and seemed to actually care if we were happy. The atmosphere is definately worth mentioning, i would come back even if the food was just ordinary so i could lounge in one of the beds with a cocktail after dinner. think sexy pinup girls and dark wood with funky music and dim lighting.
we refused desert being too full, but the manager gave us one on the house anyway...pineapple slices grilled and topped with mascarpone. i would never think to order it but like he said, after a heavy meal the fruit was very refreshing, and the flavour of the grill in the pineapple was interesting.
being semi vegetarian i can't rate this as my favourite place in town but if my carnivorous friends want to go i will happily join them! As a dining experience i am sure this is going to be the next mid price hot spot in town.

My husband and I went there for the first time, didn't realize it was the replacement of Bambu. The service was mediocre. long wait to order the food. And then, another 10 minutes went by before we got our bread. The salad was served with way too much sea salt so we had to return it. and requested another one. Then, I ordered a mixed seafood grill for my main course, which was ok but not great. Then, my husband ordered Argentinean steak, which was dry and chewy. Overall, there was not one dish that really resonated with us, let alone "wowing" us. We didn't finish half of our main course and walked away feeling disappointed. We thought Eduardo usually does better than this for his restaurants but this one definitely didn't meet our modest expectation. We told each other that we probably wouldn't come back agian.

If you like your meat, but chowing down on ribs at a sports bar is not your thing. Then the Vargas Grill is def. the place for you.
The dark and 50's pin-up style decor give a touch of style to the venue that alot of grill restaurants are missing. The meats are fresh, resonably priced and excellently prepared. The desserts downstairs are also to die for.
The service is OK, but it is a new venue so I'll them some allowance for now until their up and running more. The Vargas Grill will never compete with more hig-end restaurants, but will be a enjoyable staple for the carnivores in the community for a while I think.
