Rustic. Warm. Familial. Country style. These were the words popping up in our notes when we sampled selections from Chef de Cuisine, Tonino Giglio's new a la carte menu at Calypso. Drawing on home-style recipes from the Mediterranean region, including Italy, Spain, and southern France, the selection is rich and wide-reaching, with classic recipes given an elevated touch and new creations taking inspiration and building on traditional themes.
More than 40 dishes have been unveiled. Highlights include Tuna Tartare, Grilled Peach & Ricotta, Chicken & Duck Liver Paté, Octopus, Codfish, Roast Chicken, Lemon Raspberry Sphere, and more. Dishes are made with an eye to bright flavors and quality ingredients, in a dining experience that is sophisticated but also relaxed and approachable.
For something a little more straightforward, both the pizza and the pasta sections have been upgraded. Try the Spaghetti Ai Ricci di Mare; the homemade purple potato Gnocchi Al Gorgonzola E Noci or the Parmigiana Pizza featuring soft, fresh Burrata Cheese and grilled eggplant.
Signature Hand-Made Fresh Pasta
Traditional hand-made fresh pasta retains the natural flavor of wheat, and the freshly made noodles are rich in moisture and soft in texture, which can better absorb the sauce. There are four kinds of authentic fresh pasta styles that are hand-made in different shapes and that use different techniques, each with its own delicious sauce, ingredients, and seasonings, presenting guests with the rich and varied flavors and textures of pasta.
A Few of the Menu stars...
Starting off bright and earthy with the Grilled Peach & Ricotta, a bustling salad opener with Masclun, Walnut, Radish, and a Sherry Vineagrette. A complex, rich, and nutty dish.
A main course that evaporates in your mouth. The Cod Fish -- pan-seared and done with mediterranean herb consume. Green peas, broccoli, and baby spinach round out the sensations -- elevated but rustic. Light but complex.
A really creative way to end out a meal. The Lemon Raspberry Sphere. Lemon mousse with Fiori gelato, topped with a warm rapberry coulis.
