      The sign outside reads Bistrot De Tradition but this is still Franck, except minus its namesake on the management team. Guests select from the daily board which features simple bistro fare -- homemade terrine, simple meats, fish, cote de boeuf, etc. The dishes aren't quite the same quality as they once were, but at least the prices have dipped correspondingly.

    I've been to Franck a few times over the years and have not necessarily enjoyed myself, but that was a reflection on the company I kept on each occasion, rather than the establishment itself (boorish FOB middle aged out-of-towners on expenses). As a result, of that and the usual Anglo Saxon associations between French dining and a certain attitude, I have always felt rather ambivalent about the place, and went again for lunch this (very rainy) weekend irrationally not really wanting to enjoy myself.

    Writing the above makes me want to give the place higher praise for delivering what was a simply excellent experience under prejudice.

    Except I can't.

    A disarming, witty, genuinely good natured greeting from the Maitre d' at the door, a nice mix of relaxed regulars (I assume - see below), locals and others, range of all ages and nationalities seated in a cliché of a French bistro.

    Not a cr*ppy cliché like 2016 angry/compromised Keith McNally London Balthazar, a great happy Meat Packing District cliché like 1997, optimistic Keith McNally NYC Balthazar. Sat with my pastis apertif looking at the short menu, I got it - there is just so much thought that has gone into everything. It works, we felt like regulars after 10 minutes. Tables you can put your feet under, spotless thick cotton napkins. Perfect, just sour baguette, wine always within reach, superb terrine du maison, better foie gras, excellent saucisson and jambon bayonne, confident, smiling staff who know the menu.

    Really impressed. I feel slightly ashamed that we ordered the steak frites, but we did, there was a small mix up with the side order which was immediately spotted and cleared up by tri lingual local staff before we had a chance to bring it up.

    That first course cost us 250 kuai, albeit meant for 2, the steaks 360 each. They were almost the most expensive things on the menu and I don't begrudge the pricing a bit, (I am biased, my hands still bear the scars of picking the grapes for the 1988 Krug Clos de Mesnil), its not cheap, nor should it be. Anyone who has worked in the industry knows how hard it is to get these things right, the very least we can do was pen a few hundred words in thanks.

    I'm sure they don't need my help, but on the evidence of my last visit, and if you share my views on true value, go. I reckon (hope) you'll have as good a time as we did.

    When you want to celebrate something, when you want to drop your kuai, what do you do? You go to Franck. You get dressed up and you take your wife and you don't think about the price, you think about the fact you are getting Paris quality food and Europe quality wine selection. I dropped around 1,600RMB and 700 of that was the wine and it was amazing. It's what you save your ducats for. It's why you decline that last drink for a few weeks beforehand so you can invest in a bottle of wine that says "I'm worth it".

    Food? The chicken was slightly dry. Not enough to throw it anybody's face, but a little dry. Anyway, that's what my wife got. My beef filet was perfect. It was the everything. It was scrumdillyumptious. There were a few other appetizers - all really good. There was a dessert - off-the-charts great.

    Ambiance? Dark, unchanged in like 10 years. There's what feels like an open closet beside the bar tucked away between the bar and la toilette. Feels like someone's home. Couple of sharks necking at the bar. All good. I also like the order-off-the-chalkboard-which-is-only-in-French thing. I get to be The Guy who explains to my wife what each item is. Hero.

    Service? For a non-fluent French speaker it's about a million times better than actual Paris! Hahahaha. I'll take it. Whatever.

    Actually really good, while being a little pricey, it's a really nice atmosphere and has friendly and attentive staff.
    Menu is on easel boards, totally in French, but the staff are more than happy to explain what each one is if you're not familiar with the French names.
    They are certainly not stingy with the bread, refilling our basket constantly.
    While selection is great, too.
    If it a go.

    No problems, highly recommended.
