The chef of mainland China’s only three Michelin star restaurant, Paul Pairet, has taken over KABB's space in Xintiandi and will open a new French café. The new restaurant, to be named Polux (a diminutive form of Paul, like you’d call a kid or a pet), will be an all-day affair serving breakfast, lunch and dinner. Pairet calls it a “simple thing” where he is not trying to reinvent the wheel. “Simple and good,” he told me, before launching into a discourse on how easy it is for a steak frites to go wrong, and promising that would not be the case at Polux. Though it will not be a resurrection for Chop Chop Club (RIP) or Mr & Mrs Bund, about “90% of the menu will be extracted” from those two restaurants. What does that mean? Raspberry dessert from Chop Chop might sign up for Polux but not the iconic lemon tart from MMB. Construction has started. The tentative opening is set for March 2019.
